  • 3 cups rolled oats

  • 1 cup mixed nuts and seeds (such as almonds, walnuts, sunflower seeds, and pumpkin seeds)

  • 1/2 cup shredded coconut (optional)

  • 1/4 cup melted coconut oil or vegetable oil

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 325°F (165°C) and line a baking tray with baking paper.

  2. In a large mixing bowl, combine the rolled oats, mixed nuts and seeds, and shredded coconut (if using).
